Your Day with Webbe's Cookery School
Here follows some information about your day and details that you will need to understand and abide by to make the day a safe and enjoyable success for you.

Time: 9am at Webbes at the Fish Cafe, 17 Tower Street, Rye (Full day) OR as advertised for Sushi or Evening classes.

Parking: in the local car parks (the market car park, Rye is just £2.50 for the day(Pay and Display) and easily accessible to Webbe's, just a short walk)
Forage Days
Please meet outside Webbes at the fish café, 17, Tower Street, Rye
TN31 7at at 9am. If you are prepared to carry other customers in your car, to
travel to the woods, (about 10/15 minute drive) then please wait there with
your car too. Paul will instruct, whos driving, and direct you to follow his
car to the woods for foraging. Wear weather suitable clothing/ boots, and maybe
a small basket and small penknife if you have one. After foraging, you will
return to Rye for the cookery class, parking is best in the market carpark near
Ropewalk, and is £2.50 for the day , via
pay machines. 5 minute walk back to Webbes. You may change at Webbes/freshen up,
or leave boots in the car.
You will
then have your tuition and day of prep and cooking, and eating lunch.We hope
that you find some mushrooms!
Uniform: We will provide an apron, and working utensils and kitchen cloths. If you prefer using your own knives then please bring them with you, labelled with your name and safely wrapped for transporting.
Please wear comfortable closed toe, flat shoes, preferably non slip, remembering you will be working in a semi-commercial kitchen.
It is advisable to have long hair tied back, and you may wish to wear a scarf or bandana for hygiene purposes.
No nail varnish or jewellery should be worn, i.e. rings, bracelets or watches, must be removed.
Cool clothing is advisable, tee-shirt/cotton blouse and light trousers or jeans. We hold our current liability insurance certificate with a minimum cover of £5,000,000. Paul is fully qualified in Food Hygiene and First aid. Our day will start with an induction, you will be shown around the kitchen, equipment and its uses will be explained to you. We will then discuss the menu, delegate tasks and arrange time schedules.
In Rye, Full day, We will prepare a six course lunch. We will make canapes and other light nibbles along the way. Although we are cooking to a set menu, we will demonstrate other methods of preparation using the same ingredients and we invite you to ask questions.

The floor is a non slip material, but items spilt on it still become a hazard.
PLEASE BE CAREFUL, BE RESPONSIBLE FOR YOURSELF AND OTHERS AROUND YOU. IF IN DOUBT, ASK FOR HELP. YOU WILL NOT BE GIVEN ANY TASKS THAT ARE UNREASONABLE FOR THIS TYPE OF ACTIVITY DAY, AND IF YOU ARE UNSURE OR UNCOMFORTABLE WITH THE DUTIES, THEN YOU MAY DECLINE TO PARTICIPATE IN THAT DUTY.

Domestic issues;
We regard personal hygiene to be very important. We have the main restaurant toilets available to you.
Hand wash facilities are provided in the kitchen and should be used regularly.
For the Full day at Rye, refreshments will be provided and water should be drunk frequently during the day.
Above all the day will be FUN, a unique experience, and a close up look at an environment that is not usually accessible.
Paul will endeavour to assist everyone during the day and pass on as much information as you require.
