Salad Chinese Lettuce Spring Onion Coriander Bean Shoots Olive oil Seasoning Add chopped Rosemary, lemon zest and Bread Crumbs together To bread crumb whiting, Season, Flour, Egg wash, and Put through bread crumb mix. Deep fry until golden
Dipping Red Plum Chutney 1/2 kg Chopped Plums 300grams caster sugar 300 ml white wine vinegar 1 finely chopped onions Ground ginger, cayenne, cinnamon
Place chopped onions in a thick bottomed pan with white wine vinegar, add spices and reduced liquid by 2/3rds. Add Fruit and sugar, cook for a further twenty minutes remove from heat. It will appear wet but will thicken slightly when cold.
Assemble whiting with Salad, serve chutney to dip
