Whiting Fillets in Lemon and Rosemary with Red Plum Chutney

Try this simple recipe, Whiting is just coming into season now locally and is a very inexpensive fish, tastes and looks similar to a small cod.

Whiting Fillet

Whiting
2 Whiting Filleted and Boned
Bread Crumbs
Lemon Zest
Rosemary
1 Egg
Milk
Seasoning
Oil to Deep Fry

Salad
Chinese Lettuce
Spring Onion
Coriander
Bean Shoots
Olive oil
Seasoning Add chopped Rosemary, lemon zest and Bread Crumbs together
To bread crumb whiting, Season, Flour, Egg wash, and Put through bread crumb mix.
Deep fry until golden

Dipping Red Plum Chutney
1/2 kg Chopped Plums
300grams caster sugar
300 ml white wine vinegar
1 finely chopped onions
Ground ginger, cayenne, cinnamon

Place chopped onions in a thick bottomed pan with white wine vinegar, add spices and reduced liquid by 2/3rds. Add Fruit and sugar, cook for a further twenty minutes remove from heat. It will appear wet but will thicken slightly when cold.

Assemble whiting with Salad, serve chutney to dip
